Split flour flour with its holding property is mostly used as a substitute for eggs in vegetarian cooking instructions. One can use the split pea flour in making all kinds of kufteh, cutlet, kuku and… etc.
Pakora flour is made from a combination of split pea flour and different condiments. Vegetables pakora is very delicious and many aspire for it. Just add some water to pakora flour and stir to the extent it turns like soft honey. Then, you can immerse cauliflower,  potato, brinjal and… in pakora mix and then fry in oil. Matessian flour is made from a combination of split pea flour and various condiment and is particularly used for making vegetarian mock fish with sabzi pilau. Chunks of curd cheese is immersed in Matessian  mix and then fried in oil.
